Yummy Homemade Graham Cracker S’mores

The other day, while searching for a yummy after school treats, I came across a recipe for homemade graham crackers, and the added bonus – the crackers are actually soft and cookie-ish. These crackers are actually my favorite rendition of a graham cracker.

Well, I was in the middle of making these when the school kids came home. We usually do our “15 minutes of fame” with each kid when they get home. That means for 15 minutes it’s just me and one kid and we talk about their day. While I was mixing the cookies, my daughter wanted her “15 minutes of fame”. We worked on the cookies together, and then she asked if we could turn them into s’mores.

We baked the cookies until they were close to done – about 6 minutes. Then we poured a package of chocolate chips and then covered the chocolate with marshmallows. We set the pan back into the oven and “roasted” the marshmallows – about 5 minutes more. Then, during my son’s 15 minutes of fame, he suggested melting and drizzling chocolate over the top of everything.

This is what everything looked like when we were finished in the kitchen.

The result was “Oh my goodness” good. We learned the cookies are better if they are allowed to cool completely before cutting and serving them. But they didn’t last long and were requested again the next day.

Here’s the recipe:

Yummy Homemade Graham Cracker S’mores

  • 2 1/4 C Wheat Flour
  • 1/2 tsp Baking Soda
  • 1/3 C Brown Sugar
  • 1/3 C Butter
  • 1/4 C Honey
  • 3 Tbsp Hot Water
  • 1 Bag Chocolate Chips
  • 1 Bag Marshallows

Combine all dry ingredients.

Cut in butter.

Combine honey and water then add to rest.

Blend well.

If dough seems stiff add water 1 tsp at a time.

Press into a sprayed 9 x 13 pan.

Bake for 5 minutes at 375 F.

Add Chocolate Chips and Marshmallows, bake about 5 more minutes until the marshmallows are Golden Brown.

If desired, melt another 1/2 bag of chocolate chips and drizzle over the top of everything.
